I love me my vegetables! We were given a gorgeous zucchini from a friends garden & I knew Fritters were calling my name!
I added onion and carrot because the more veggies the better!
Carrot Zucchini Fritters
Quick and easy
-1 large or 3 small zucchini, grated
-1 carrot, grated
-1 small white onion, chopped
-1 clove of garlic, minced
-1/4 cup flour (of your choice, I used basic old white flour because we are on holiday and it’s what was available)
-dash of salt
- Grate the carrot and zucchini, wring/squeeze out excess water
- Combine all ingredients
- Heat skillet to medium/high heat, scoop mixture into patty sized blobs, flatten out. Cook on 4 minutes each side, until nice and brown
Serve with guacamole and a green salad #noms!
