Zucchini Carrot Fritters

I love me my vegetables! We were given a gorgeous zucchini from a friends garden & I knew Fritters were calling my name!

I added onion and carrot because the more veggies the better!

Crockpot Pumpkin Soup

Quick and easy customizable soup

Ingredients

-1 large or 3 small zucchini, grated

-1 carrot,  grated

-1 small white onion, chopped

-1 clove of garlic, minced

-2 eggs

-1/4 cup flour (of your choice, I used basic old white flour because we are on holiday and it’s what was available)

-dash of salt

Directions

  1. Grate the carrot and zucchini, wring/squeeze out excess water
  2. Combine all ingredients
  3. Heat skillet to medium/high heat, scoop mixture into patty sized blobs, flatten out. Cook on 4 minutes each side, until nice and brown
  4. Serve with guacamole and a green salad #noms!
